Nitō is a Brisbane / Japanese grill in Fish Lane, South Brisbane.
The cooking takes its cues from Japan: precision, restraint and respect for ingredients. We are not trying to recreate a restaurant in Tokyo. We cook from Brisbane.
Queensland seafood, vegetables and meat sit alongside Japanese ingredients and techniques, with much of the menu centred around the charcoal grill. Some dishes stay close to tradition. Others wander further.
The menu is designed for sharing, moving from raw seafood, snacks and dumplings to vegetables, fish and larger cuts cooked over coals, with rice and plenty to drink.
THE FOOD
Japanese cooking gives us the framework, rather than the rules.
We care about good produce, careful technique and food that tastes delicious before anything else.
That might mean reef fish with white tosazu, scallops with yuzu kosho, dumplings, Berkshire pork over coals or duck claypot rice.
We are not interested in making Brisbane feel like Ginza. Nitō should taste like where it is.
The grill sits at the centre of the kitchen.
Seafood, vegetables and larger cuts of meat are cooked over charcoal, sometimes simply and sometimes with sauces and garnishes that borrow from elsewhere.
The coals give the restaurant its rhythm and much of the food its character.
The drinks list moves between Japan, Australia and further afield.
Sake, Japanese whisky and highballs sit alongside Champagne and plenty of Australian wine, all chosen with the food in mind.
Drink something serious, or don't.
THE ROOM
Nitō is dark, loud and a little nostalgic.
Records play behind the bar, the lights stay low and the room draws on the warmth and looseness of the 1970s rather than the polish of a traditional Japanese dining room.
Come for a drink and a few plates, or stay for dinner.
